Smoked Chocolate Chip Cookies

Serves: 3 dozen
- ¾ cup oil
- ¾ cup sugar
- ¾ cup brown sugar
- 2 eggs
- 2¼ cup flour
- 1 tsp. baking powder
- ½ tsp. salt
- ¾ tsp. vanilla extract
- ¾ tsp. liquid smoke
- 12 oz. semi-sweet chocolate chips
- Preheat the oven to 350 degrees F.
- Line cookie sheets with parchment paper.
- In the bowl of an electric stand mixer fitted with a paddle attachment beat the oil with the sugar and brown sugar until combined.
- Add the eggs and mix to combine.
- Add in the flour, baking powder, salt, vanilla, and liquid smoke and mix to form cookie dough.
- Add in the chocolate chips and stir to combine. The dough will seem greasy, and the chips may be difficult to incorporate, but that is ok!
- Chill in the fridge for about half an hour just to firm up the cookie dough.
- Scoop the dough using a large cookie scoop or a tablespoon into the parchment lined cookie sheets.
- Bake for 8-10 minutes until the edges are slightly brown.
- Remove from oven and cool on wire racks.
